This oil is cold extracted, filtered and subjected to natural decantation in an inert atmosphere. Once it has been analyzed and tasted, it is kept in oxygen-free stainless steel tanks until packaging.
An unquestionable sign of its excellent quality is the low acidity of this olive oil, always lower than 0.15% and reaching 0.08% in some batches.
Most of this oil is of the picual variety. The picual olive is the one that offers the highest content of oleic acid and antioxidants, and the most stable, it presents a great resistance to rancidity and maintains its characteristics for a longer time, two or three times greater than in the rest of the varieties.
