It is an extra virgin olive oil of Premium category, cold extracted from olives of the Picual variety. Harvested early, at the right moment when the olive is still green, before the fruit begins to color and the chlorophyll is destroyed.
Intense fruity green olive with notes of freshly cut grass, green almond, mint, artichoke, tomato and green banana. Very balanced and harmonious bitterness and hotness.
