Once the olives are harvested, they are transferred to the mill, where they are immediately cold-ground to preserve the quality of the final product.

The cold extraction process is carried out by mechanical procedures and below 22ºC, with the aim of altering the flavor and original properties of the olive as little as possible and thus obtaining an Extra Virgin Olive Oil (EVOO) of the first extraction. that it conserves intact all its properties, vitamins and highly beneficial fatty acids for the organism.
