Deer ham is marinated in a marinade with red wine, a splash of vinegar, some vegetables and aromatic herbs for at least 24 hours. This fulfills a double function, such as tenderizing the meat and giving it flavor. Make the mushroom sauce by sautéing the garlic, add the wine from the marinade and let it reduce. Add the meat juice and cook until tender
