Oil from olives collected in October, taken to factory every hour, where they go directly. Cold extraction. It has emerald green color, bright and clean. In the nose it is fruity of green olive with aromas of herbs, tomato and artichoke; next to more mature notes of fresh fruits such as apple or green banana. It has a soft entrance in the mouth, which reminds us of olfactory notes, a slight and spicy progressive bitter. Good structure and persistence. Ideal for raw consumption.
