The olive oil of the picual variety is the richest in oleic acid, surpassing oils of other varieties by almost 10%. Oleic acid and polyphenols are associated with reduced risk of cardiovascular and liver disease.
It has a high composition of fatty acids as well as a large amount of natural antioxidants.
