Taste: In the mouth it is, sweet, moderately bitter and somewhat spicy. Very balanced.
This extra virgin olive oil shows us an aroma of fresh grass, tomato and artichoke that reminds us of the extensive olive trees of the Guadalquivir high basin. Transmitting a peace and waking us a unique feeling. First harvest night. This year’s collection was made at the end of October. Being October a month of high day temperatures, which in many cases reaches up to 30 degrees, the collection is carried out at night, thus guarantees that the temperature from obtaining the olive tree, until obtaining its elixir , be permanently below 20 degrees. The collected olives go through the dethria process, in which those that do not meet the established requirements are discarded.
