AROMA: Very intense fruitiness of green olive and very complex, with green notes of apple, grass, stems, alloza and tomato plant.
FLAVOR: In the mouth it is, at first, sweet, moderately bitter and somewhat spicy. Very balanced.
This extra virgin olive oil shows us an aroma of fresh grass, tomato and artichoke that reminds us of the extensive olive fields of the upper Guadalquivir basin. Transmitting us peace and awakening a unique feeling. First night of harvest. This year's collection took place at the end of October. As October is a month of high daytime temperatures, which in many cases reach up to 30 degrees, the harvest is carried out at night, thus guaranteeing that the temperature from obtaining the olive to obtaining its elixir , is permanently below 20 degrees. The harvested olives go through a stripping process, in which those that do not meet the established requirements are discarded.
