Deer ham in a marinade with red wine, a jet of vinegar, some vegetables and aromatic herbs is at least 24 hours. Thus a double function is fulfilled, such as softening the meat and flavoring it. We make the mushroom sauce sautéing the garlic, add the wine of the marinade and allow it to be reduced. We incorporate the meat juice and let it cook until this tenderness: deer, cooking broth, extra virgin olive oil, mushroom, onion, tomato, salt, wine, corn starch, gelatin and spices.
